60ml Ron Zacapa fat-washed with local Irish Cashel Blue Cheese for 2 hrs at a ratio of 7:1 20ml homemade ginger & cinnamon syrup (For 250ml: 100ml of fresh ginger juice; 1 tsp freshly ground cinnamon; 100ml of water; 175g of sugar) 3 drops clove tincture (5 cloves crushed and added to 50ml of Ketel One, left to rest for 24 hours and then fine strained) Combine ingredients in stirring glass. Add ice and stir gently to combine flavours. Strain into glass teacup w/ 1 large ice cube
