No matter how busy your bar gets, speedy service, high-quality drinks and happy customers are of the utmost importance. Andrej Malic shares his hacks from behind the mahogany on how to get the best out of your craft on a busy night.
1) SPEED RAIL SET-UP
Andrej tells us that prepping your speed rail with the ingredients in the order they’re used is a big time saver. Plus, putting spirits next to their modifiers reminds you what to pour next and minimises mistakes during busy periods. For a bar with an extensive menu, this may be difficult to implement, but with a signature/craft menu it’s a great way to speed up service.
2) DOUBLE JIGGER
Using two jiggers at the same time will speed up service but keep your drinks consistent. Although free pouring speeds up service, it can often sacrifice on quality of the drinks as even the world’s best bartenders can’t consistently free pour every single time.
The only way to guarantee quality and consistency every time is to use your jigger, but it is slower. Using two at once – and rotating them between your hands when returning bottles to the speed rail – ensures speed and quality. Win-win!
3) MAKE YOUR HOMEMADE SYRUPS LAST LONGER
Adding a splash of vodka to your syrups can extend their shelf life meaning less waste! Most regular simple syrups have a shelf life of around a month or so, and fruit or tea-based syrups can spoil in less than a week, but adding a splash of vodka will prevent mould causing them to decay. Alcohol is a natural preservative – and as vodka is without flavour it won’t change the taste of your syrup either.
4) ADD SALINE TO DRINKS
Adding saline to your serves can improve your creations – saline is a simple salt and water solution, so can enhance flavours and make a world of difference. A few drops per serve is all you need!
