He began on the first rung of the ladder, washing dishes, then progressing to work in the cloakroom. After some practice and a little bit of persuasion, Jørgen then got his first shift behind the bar. Like Ted, Jørgen takes a very thorough approach to each challenge – “crunching my brain with ideas on how to make this work with that” is how he describes developing a cocktail.
